Fab Freebie: Eat Bright

This week we’re keeping the eco-friendly theme going with a freebie from Bright and Bold. They’re a great online resource for all sorts of green home wares, including the much-loved Envirosax bags and other items like jewelry and gifts. Plus, everything on the site ships to the US for free (our favorite four letter word), so you gotta give it them for making the world a happier place.

This week we’re teaming up with Bright and Bold to offer up some earth-friendly products in a lunch-themed giveaway (shouldn’t more things in life be lunch-themed?). Three people can comment to win the perfect tools for a no-waste midday meal: their very own Klean Kanteen and a reusable Fresh Snack Pack bag. You’ve heard us rave about Klean Kanteens before (check it out here and here) and they’re consistently ranked as some of the best reusable, stainless steel bottles out there because they’re non-leaching and bpa-free. Which explains why we currently own three of them (only two are pictured because I keep one at work, so Burger’s filling in as an honorary member of the Klean Kanteen gang).

Along with the reusable water bottles, our trio of  winners will also score the Fresh Snack Pack bags which are a great reusable alternative to the traditional Ziploc disposable sandwich bags. They’re made of food safe, nontoxic, PVC-free, Pthalate-free plastic that’s easy to clean and it even folds out to make a placemat. So you no longer have to worry about getting mustard on your latest work assignment (or am I the only one who does that?).

    I’ll Eat Bright!!
    My favorite lunch options, other than leftovers, is a meatball sandwich. I just bring the meatballs in a tupperware, warm ’em up, and enjoy on a sandwich roll. Yum! But even better with a Kleen Kanteen of fresh, non leeched plastic water!

    I’LL EAT BRIGHT!

    My office is obsessed with Mexican food – which, as a Texas gal, I also love but I get a bit sick of feeling so full and lethargic after lunch. My favorite lunch is hightailing it to the Whole Foods salad bar down the street and spending my lunch break wandering amongst all the fresh flowers and enjoying something not drenched in grease!

    I’ll Eat Bright!

    I like to get lots of veggies in at lunch by buying a load once a week and chopping them all up. I put lots of red, yellow and green peppers, and broccoli, and sugar snap peas in a bag, and then grab a few handfuls and some mixed greens in the morning. Voila: delish salad quickly! (plus some goat cheese. obvs.)

    My fave is leftovers. I usually cook a bunch of something and then make up several meals to go when putting it all away. This way it’s ready for me to grab as i walk out the door.

    I’ll Eat Bright!
    Since Im a stay at home mom now I find it more difficult to find interesting meals that dont get boring from day to day and are still healthy, but they have to be quick and easy because kids dont wait. My new loves are couscous and tabouleh. If you make it, it should last a couple days and you can quickly put tabouleh in a lettuce leaf and make an easy lettuce wrap. Heat up some couscous and add some feta cheese and sundried tomatoes and tada! Tasty.

    I pack a lunch every day for myself and the hubby – salads, sandwiches, fruit you name it. I would love to be able to pack our lunch in eco-friendly options that don’t resemble a plastic shopping tote from a store!

    My go-to lunch is turkey on wheat with a side of sun chips or soy yogurt. My coworkers and I go out once a week, and at our favorite place I’ll get a Turkey & Artichoke Panini — fresh turkey breast with an artichoke pesto, sautéed vidalia onions and melted havarti on a ciabatta roll — delicious!!

    My favorite lunch to go is left-overs; my hubbie and I like to cook together and whether it’s soup, beans and rice, curry, or simple pasta it’s tasty, better for me and reminds me of the fun we had cooking it!

    Go-to lunch: garden fresh veggies for snacking; baguette with provolone cheese, spicy mustard, tomato, olives and spinach or lettuce; Honey Dijon Kettle chips; and a grapefruit Izze.

    I’ll eat bright!
    Basically, leftovers are what I eat. Curry and rice or grilled chicken breasts with rice are my two favorite lunches. If I have some leftover steak, I’ll make a steak sandwich.

    Unfortunately my go-tolunch isn’t too glamorous – just a Lean Cuisine from the freezer. Oh, and I love to cut up a whole tomato and pour tons of salt on, and eat the whole plate full. Yummy tomatos!
